What is Stroganoff?
We all have always heard about stroganoff and it’s always associated with beef as the main ingredient. Is there a Vegan version – Yes, there is – It’s Mushroom Stroganoff served with the sauce of your own choice. It’s one of the delicious meals you can have any time anywhere and the best is it does not require much time for cooking. It also falls in the category of quick snack and dinner
Mushrooms are one of the best plant-based food. They are the best replacement of the meat in stroganoff and are good in flavour. Mushrooms even taste better when cooked in some sauces or served with seasonings.
Here is the Vegan Mushroom Stroganoff recipe. Only 7-8 ingredients are needed to cook this vegan recipe and will take 20-30 minutes only.
INGREDIENTS
- Pasta
- Sauté onions
- Garlic/ shallots/ leek
- Flour / cornstarch
- Mushrooms
- Non-dairy Cream
- Vegan parmesan cheese
STEPS TO COOK THE RECIPE
- You can take pasta of your choice and cook it/boil it in a large pot of salted boiling water. Cook pasta according to the package instructions and drain it well. You can even replace pasta with rice or potatoes.
- In the meantime, you can make the creamy vegan mushroom sauce. Chop the onions into small pieces and sauté them in a metal cooking pot. Add minced garlic and sliced mushroom to the onions. (the onions can be replaced with the shallots or leek according to the flavor you like and in case of mushrooms both white and brown cremini mushrooms can be used for your flavor. )
- Now make a mixture using flour or cornstarch which will form a roux-like mixture, to the veggies. This flour will thicken the sauce.
(You can also add nutritional yeast and mustard to get some cheesy flavor) - In the next step, add non dairy cream to the mushroom stroganoff. The cream will make it rich in taste. This non dairy cream can also be replaced by the coconut milk or soy milk.
(If you like cashews, then you can also make cashew cream by soaking the cashews or using cashew butter and water) - Now once the sauce gets thicker and get creamy texture, it’s time to add the cooked pasta to the sauce. Let it heat for 2-3 minutes and your dish is ready to serve.
