Pumpkin, hang on not much of a fan of it apart from using it during Halloween. However, it changed my mind when I tried a Vegan Pumpkin Alfredo recipe made by a friend. I tried it loved it and now I want to share with you guys.

Few things to keep in mind:
Alfredo Sauce is basically a cashew cream! Yes, you heard it right. But before making it just make sure that you are using raw unsalted cashews. Soak the cashews overnight or leave them in water for 2 hours. After that blend them in the grinder. While blending don’t forget to add little water so that you get the perfect texture and the smooth cream. Do not add much water because if you do so, it will ruin your sauce. Now you have a great, smooth cream and is ready to mix it with pumpkin.
Ingredients:
- Pasta
- Pumpkin
- Mushrooms
- Cashews
- Garlic
- Sage leaves
- Extra virgin olive oil
- Black pepper/Chilli Flakes/oregano
Time to cook:
- Put the pasta (any pasta you like) in the salted boiling water. Cook it for the time duration that is mentioned on the pack and strain it is cooked
- On the other hand, take a pan, add few drops of extra virgin olive oil.
- Now sauté some garlic. When you feel your garlic is ready then add mushrooms and sauté them carefully.
- When everything is ready add the sauce that you made earlier.
- Keep stirring so that no lumps are made.
- Add the pasta in the cream and mix it well.
- And it’s time for the seasoning, add black pepper/Chilli flakes/oregano on the top and mix well
- Put your pasta in a bowl and garnish it with some sage leaves.
And we are done. ( If you don’t want to make pasta just use the cream in sandwiches/ burgers or have them with the Doritos)
