This Punjabi Aloo Paratha or Aloo ka Paratha is sure to please bread and potato lovers. Though there are other types of stuffed paratha, many people like aloo ke parathe above all others.
Here is a recipe for the common Indian flatbread known as “aloo paratha,” which is filled with a hot potato filling:
Ingredients:
- 1 cup whole wheat flour
- 1/2 cup water
- 1/2 tsp salt
- 1/2 tsp oil
- 1 cup boiled and mashed potatoes
- 1/2 tsp cumin seeds
- 1/2 tsp coriander seeds
- 1/2 tsp mustard seeds
- 1/2 tsp cumin powder
- 1/2 tsp coriander powder
- 1/2 tsp garam masala
- 1/2 tsp amchur (dried mango powder)
- 1/2 tsp red chili powder
- 1/2 tsp salt
- 2 tbsp finely chopped coriander leaves
Instructions:
- In a bowl, mix together the flour, water, salt, and oil to form a dough. Knead the dough for a few minutes until it becomes smooth and pliable. Cover the dough and set it aside to rest for 30 minutes.
- In a separate bowl, mix together the mashed potatoes, cumin seeds, coriander seeds, mustard seeds, cumin powder, coriander powder, garam masala, amchur, red chili powder, salt, and coriander leaves to make the filling.
- Divide the dough into 8 equal portions. Roll each portion into a small ball.
- On a lightly floured surface, roll out one of the dough balls into a small circle. Place a spoonful of the filling in the center of the circle.
- Bring the edges of the dough up and over the filling, pressing the edges together to seal the filling inside.
- Gently flatten the stuffed dough ball and roll it out into a circle again, being careful not to break the seal.
- Heat a nonstick pan over medium heat. Place the paratha in the pan and cook it for a minute or two on each side, until it is golden brown and crispy.
- Repeat the process with the remaining dough and filling. Serve the parathas hot with your choice of chutney or raita.
